Chicory
Have you ever wondered what that pretty, little blue flower is growing along the highway, or in the cracks of the median at the intersection while you're waiting for the light to change? It's Chicory! Chicory root has been used as a substitute for coffee for centuries. It was used as 'Camp Coffee' by Confederate soldiers. Not originally from the USA, but has since naturalized here.
